Cheddar Bay Biscuit Chicken Pot Pie

I’ve seen this recipe in various forms and in various places on the internet, so I can’t claim it’s my recipe. But regardless, it’s really delicious. Of course, you can add different vegetables to it. I’ve seen some recipes with peas and some without the celery. After trying this one, I think I prefer the peas more.

Give yourself plenty of time to prep. It takes a while to chop up 2 cups of carrots, 2 cups of celery and an onion. That is one more advantage to using peas.. one less thing to chop.

The entire family was home for this one. The general consensus was to use peas next time and ‘make it more juicy’. With that feedback, you may want to increase the amount of chicken broth.

I started by boiling a chicken. Next time, I will use a rotisserie chicken. Boil for 90 minutes, let cool then pull the chicken.

Next, mix the dough together using some milk and cheese. It gets pretty thick.

Chop.. a lot. Chop, chop, chop. I hate chopping this much. Ok, so that is all done. Throw that in a pan with some butter and cook those until tender.

Once the veggies are tender, add the flour and poultry seasoning and cook to make your roux. I had to spell check that word.

Next, I added the whipping cream and chicken broth and brought that to a simmer until it thickened up. Once it thickened up, I added the chicken back into the skillet and stirred. Carefully. My original plan was to bake this in a cast iron skillet. But there was so much, so I ended up dumping it into a boring casserole dish. Look at that photo!! Boring!!

Now comes the interesting part. Take the biscuit mix, and the directions say to ‘drop’ but that doesn’t really work. I had to scrape the mess off a spoon and then smooth it out with my fingers so it covered more area on top of the mixture. Once that fun is done, throw it in the oven at 375º for about 20 minutes.

While you’re waiting on that to bake, you can take the seasoning pouch from the biscuit mix, melt 3-4 tablespoons of butter and mix together. When you pull the dish from the oven, brush that yummy buttery mixture on top. I retuned it to the oven for a few minutes to brown it up.

Finally, I set it on the table for about 10 minutes because it was hot. Really hot.
